  
Much of the daily home cooking in the Caribbean has a curry base. Curry was imported to the West Indies by the many immigrants from India in the 1700's and 1800's. Another popular cooking style is "jerking" which originated centuries ago in Jamaica. Traditionally pork was used, but now jerked fish, lamb, beef and poultry have become popular. Our jerk seasoning is a traditional Jamaican blend of peppers, scallions, black pepper and allspice with a hint of thyme, cloves and cinnamon.
